What unique experiences are open to 7-year-olds at SeaWorld Orlando (or Aquatica) and Busch Gardens Tampa Bay?

We're planning our family vacation to Florida this spring and I'm looking for something exciting to do for a 7 year old at Sea World Orlando, Aquatica, or Busch Gardens Tampa Bay. We've been able to acquire better plane & hotel rates than expected and would like to give the kids something extremely memorable. His older sister is old enough to participate in the Shark & Beluga interactions at Sea World as well as the Tiger, Orangutan, and Elephant Keeper programs at Busch Gardens. I'd love for her to be able to participate in one of those programs with (accompanied by one of us) but I'd also like for him to have something to say besides "my sister got to feed a whale/swim with sharks on vacation"
